Recipe: Peanut Butter & Chocolate Energy Bites

- 1/2 cup peanut butter (can sub another nut butter or sunflower butter)
- 1/2 cup oats
- 1/3 cup flaxseed meal
- 1/3 cup protein powder of choice
- 1/4 cup honey or maple syrup
- 2 TBSP mini chocolate chips
- 1 TBSP chia seeds
- 1 tsp vanilla
Instructions:
Place all ingredients (except chocolate chips) in bowl of food processor and pulse several times until well combined. Add chocolate chips and pulse a few more times. With hands roll mixture into 10 balls/servings.
If you don’t have a food processer, mix all dry ingredients together first, then mix in wet ingredients until combined. Use hands to roll into 10 balls/servings. If mixture is too dry due to varying textures of protein powders/nut butters, add more sweetener or peanut butter to get to desired consistency for rolling.
