Recipe: Crispy “Cool Ranch” Chickpeas

Prep Time: 10 minutes
Cook Time:  35-40 miutes

Ingredients (makes 8 servings)

  • 2 cans chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill
  • 1 teaspoon dried parsley
  • ¼ teaspoon dried basil

 

Directions

  1. Preheat oven to 400 degrees Fahrenheit, and line a large, rimmed baking sheet with parchment paper.
  2. Use paper towels to pat the chickpeas until they are dry. Spread the chickpeas evenly across the prepared baking sheet.
  3. Roast as-is until golden, shaking the pan every 10 minutes, for about 20-25 minutes in total.
  4. Give the chickpeas one last shake, then turn off the oven and leave them in for another 10-15 minutes. Check occasionally to ensure they do not burn.
  5. Remove the chickpeas from the oven and transfer to a serving bowl. Toss with olive oil and seasoning mix. Once cooled, store them in an airtight container for up to 1 week!
