Recipe: Crispy “Cool Ranch” Chickpeas

Cook Time: 35-40 miutes
Ingredients (makes 8 servings)
- 2 cans chickpeas, drained and rinsed
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried dill
- 1 teaspoon dried parsley
- ¼ teaspoon dried basil
Directions
- Preheat oven to 400 degrees Fahrenheit, and line a large, rimmed baking sheet with parchment paper.
- Use paper towels to pat the chickpeas until they are dry. Spread the chickpeas evenly across the prepared baking sheet.
- Roast as-is until golden, shaking the pan every 10 minutes, for about 20-25 minutes in total.
- Give the chickpeas one last shake, then turn off the oven and leave them in for another 10-15 minutes. Check occasionally to ensure they do not burn.
- Remove the chickpeas from the oven and transfer to a serving bowl. Toss with olive oil and seasoning mix. Once cooled, store them in an airtight container for up to 1 week!
