Recipe: MyPlate Chicken Salad

Ingredients (makes 10 3oz. servings)

  • 2, 12.5 oz cans chicken breast
  • 1/2 green apple, coarsely chopped
  • 1/2 cup red or purple grapes, cut into fourths
  • 1/4 cup celery, finely chopped
  • 1/4 red onion, finely chopped
  • 1/2 tablespoon lemon juice
  • 1/2 cup Greek Yogurt
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 tablespoon garlic powder

 

Directions

  1. Cut apples, grapes, celery and onion. Place in mixing bowl with lemon juice and stir.
  2.  Mash chicken breast chunks with a fork into smaller pieces, add to mixing bowl.
  3.  Add remaining ingredients and stir until combined.
  4.  Serve with whole grain crackers or whole wheat bread.
