Recipe: MyPlate Chicken Salad
Ingredients (makes 10 3oz. servings)
- 2, 12.5 oz cans chicken breast
- 1/2 green apple, coarsely chopped
- 1/2 cup red or purple grapes, cut into fourths
- 1/4 cup celery, finely chopped
- 1/4 red onion, finely chopped
- 1/2 tablespoon lemon juice
- 1/2 cup Greek Yogurt
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 tablespoon garlic powder
Directions
- Cut apples, grapes, celery and onion. Place in mixing bowl with lemon juice and stir.
- Mash chicken breast chunks with a fork into smaller pieces, add to mixing bowl.
- Add remaining ingredients and stir until combined.
- Serve with whole grain crackers or whole wheat bread.
