Recipe: Slow Cooker Mashed Potatoes & Cauliflower

Ingredients (makes 12 servings)
- 2 ½ pounds potatoes, peeled and cubed
- 1 cup chicken broth
- 1 head cauliflower, chopped
- ¼ cup milk of choice
- ¼ cup butter, softened
- ¼ light sour cream
- 1 tsp garlic powder
- ¼ tsp paprika
- salt and pepper to taste
Directions
- Combine potatoes and chicken broth in slow cooker.
- Cook potatoes on low for 3 hours. Add cauliflower and cook on low for another 3 hours.
- Stir in milk, butter, sour cream, garlic powder, paprika, salt and pepper into potato mixture.
- Use potato masher or blend with immersion blender to desired consistency.
